The 5th category of taste perception

About the taste, chinese always use 4 words to describe: sour, sweet, bitter and hot (or spicy). However, we studied science in our school, there are 4 categories: Sour, sweet, bitter and salty.

Then, do you heard about “umami”? That is new for me. That is the 5th category of taste perception. That is “meaty taste”, or in chinese: 鲜味.
